If All Else Fails, Buy an Egg Poacher
Making poached eggs without an egg poacher is extraordinarily difficult. Every chef seems to manage it, but they are probably forced to practice over and over at chef school until they get it right. You can get through a lot of eggs that way and it is quite demoralizing as one egg after another ends up as an inedible gooey mess.
There seem to be a lot of tips around on how to poach eggs properly. For example, you are supposed to use very fresh eggs, make sure the water stays at simmering temperature rather than boils rapidly and drop the eggs gently into the water. Some people swear by a drop of vinegar in the water. Others think a spoonful is necessary. They will tell you to create a whirlpool with the water too before you drop in the eggs. It will certainly help a lot if you follow these tips, but if you are still not confident, think about buying an egg poacher.
These come in all different kinds, from silicone poaching cups that you float on top of the water to electric egg poachers which you don’t need to put on the stove at all. You can even get a machine which makes toast and poaches your eggs at the same time for an instant breakfast from one appliance.
Unfortunately you don’t get quite the same effect, with these gadgets, as poaching the eggs in water as you are steaming the eggs, in a way, rather than poaching them. (Poaching after all means cooking in water) Cooking the eggs without a poacher, gives you a softer texture and a more natural shape and that is a tell tale sign whether you cooked the eggs like a chef or not.
Still, better slightly firmer whites to your eggs and a perfectly round shape than poached eggs that you cannot serve up to your guests or family at all, so if you have had a few attempts at proper poached eggs and have not succeeded, get yourself an egg poacher.
